香椿屬落葉喬木，原產亞洲東部至南部的溫帶與亞熱帶氣候區。主幹直立，分枝較少。樹皮老後片狀剝落。偶數羽狀複葉，葉緣有小鋸齒，新葉紅或紫紅色，葉面光亮。由聚繖花序組成的圓錐花序自枝端伸出下垂。深褐色蒴果橢圓形，成熟開裂散出具翅的種子。開花期夏季，結果期秋至冬季。

A deciduous tree in the genus Toona, native to temperate and subtropical regions from eastern to southern Asia. Trunk erect with few branches. The bark flakes off when old. Leaves even-pinnately compound, margined fine serrations, new leaves red or reddish-purple, blade glossy. Panicles consist of cymes protruding and hanging from the branch tips. Dark brown capsules oval, cracked to give out winged seeds when mature. Flowering in summer, and fruiting from autumn to winter.

適合全日照溫暖至冷涼環境，根部忌積水，植株略具耐旱性。春至秋季每季施用一次長效性肥料。有摘芽食用的目的，可以離地30cm截幹，促進生長側枝以矮化植物來方便採收。繁殖採用播種、扦插、空中壓條與挖取根蘗種植。

It suitably grows in warm to cold environments with full sun; moderately drought-tolerant, avoid waterlogging in the root. Apply long-active fertilizers once a season from spring to autumn. The young leaves are harvested as a vegetable; prune the top of the trunk to keep it around 30 cm high to promote the growth of lateral branches and make it easier to harvest. Propagated by seeds, cuttings, air layering and tillering.

適合種植於庭院、學校、公園作為景觀樹與教材植物使用。幼芽及嫩葉芳香可口，是著名的芳香蔬菜。木材紋理美麗，質地堅硬有光澤。根皮及果實作藥用。

The plant is suitably planted in gardens, campus, and parks as landscape trees and educational material. The sprouts and young leaves are scented and taste delicious and it’s a well-known spice vegetable. The wood is hard, glossy and delicately-grained. The root epidermis and fruits can be used as medicine.
